Why it's brain-healthy

Lentils bring fiber and plant protein while the vegetables and greens layer in the antioxidants and folate central to brain-healthy eating.

Ingredients

  • 1 cup dry lentils, rinsed
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 6 cups vegetable broth
  • Herbs to taste

Instructions

  1. 1Sauté carrots, celery, and garlic in olive oil.
  2. 2Add lentils and broth; simmer 25–30 minutes.
  3. 3Stir in spinach and herbs at the end until wilted.
