Why it's brain-healthy

Beans are a MIND-diet staple, providing fiber, plant protein, and slow-digesting carbohydrates that keep meals — and energy — stable.

Ingredients

  • 1 can chickpeas, rinsed
  • 1 cucumber, diced
  • 1 tomato, diced
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • Juice of 1/2 lemon
  • Black pepper to taste

Instructions

  1. 1Combine chickpeas, cucumber, tomato, and parsley.
  2. 2Dress with olive oil, lemon, and pepper.
  3. 3Toss and serve (better after 10 minutes to marinate).
